Stir-Fried Shrimp with vegetables

5/5/2016: Shrimp goes great with a lot of vegetables. Here I stir-fried shrimp with pea, corn and onion that has been one of the favor dish for my family.

The best way to cook the shrimp is marinating them with cooking wine, egg white, salt and pepper for 10 – 15 minutes. In the meantime, defrosted the pea and corn in microwave. Put diced scallion and garlic in the cooking pot with cooking oil first, then stir-fried  the shrimp very quick and take them out as soon as the meat turn from clear to white. Put in the pea and corn to the remain oil, stir-fried with salt and pepper for few minutes. Put shrimps back to pot mixed with pea and corn. Thicken sauce with cornstarch and water.

Below is another way to cook shrimp with celery, dry mushroom, onion and cilantro. Served with rice noodle (at bottom):

 

Soak dry mushroom in water ahead and slice them when they turn soft. Wash and cut any other vegetable you like to stir-fried with shrimp. Pull 2/3 of the water that soaking mushroom in a new bowl, and mix it with little salt, pepper and cornstarch as sauce. Throw away the rest of 1/3 water at bottom. Cook all the vegetables in the same pot until they all done. Then, add the cooked shrimp back to the pot. Mixed well while adding cilantro and sauce. Turn off gas and take the food out as soon as the sauce starts boiling.
