Stir-fried Chicken Noodle with Vegetable

7/29/2016: I always like to check whatever I have in the refrigerator before planning what I will cook for dinner. It’s more fun to surprise myself and my family member if they are having dinner with me.

For example, I found two pieces chicken breast that my daughter-in-law bought the other day. I also found a couple of purple onion and a bunch of asparagus in vegetable drawer. So stir-fried chicken with purple onion and asparagus would be good for dinner came to my mind right away.

Just before dinner, I realized that we didn’t have enough left over rice to go with my chicken dish. So I boiled a pot of water and cooked some noodles. It’s fast and great with this chicken dish. My daughter-in-law and I had rice with chicken and my son had chicken noodle for dinner. Everybody was happy.

Here is how I cooked this dish:

  1. Sliced chicken breast and marinated with dark soy sauce, egg-white and five spices for 30 minutes.
  2. Sliced onion and cut asparagus.
  3. Cut some garlic and scallions.
  4. Heat the pan with some vegetable oil. Put garlic in first, then stir-fried chicken until it’s cooked. Then, put onion and asparagus in the pan. Put cornstarch with water to thick the gravy. Garnished with scallions.
  5. Drain water from the cooked noodles. Add soy sauce, sesame oil and scallions to the noodles for flavor. Put the noodles on plate or bowl, then add the chicken and veg. on top. Sometime, I cooked some broccoli to put around the plate.
