Meatloaf, Tofu, Bok Choy and Shiitake

2/23/2017: Meatloaf is common dish for American. Here is how I made meatloaf “T.K. style” and stir-fried tofu, bok choy and shiitake serving along both sides of the meatloaf for dinner.  A balanced meal with meat and vegetables for us.

Ingredients for Meatloaf: 

  • (1) lb. of ground beef and (1) lb. of ground pork.
  • (1/2) box of soft or medium firm tofu.
  • (1) egg
  • (1/2) fine diced onion
  • (2) Tsp soy sauce
  • (2) tsp garlic powder and pepper (more or less as you like)
  • Option: A few cilantro if desire
  • (2) Tsp brown sugar
  • (2) Tsp mustard
  • (1/2) cup of ketchup

Instructions:

  1. Preheat oven to 350 degrees (F).`
  2. Mix meats with diced tofu, onion, egg, soy sauce, garlic powder well.
  3. Used tin foil wrap and shape it to long and round size.
  4. Mix brown sugar, mustard and ketchup in separate bowl and put on top of the meatloaf.
  5. Bake for one hour, then open the tin foil to bake for another 30 min.
  6. Slice the meatloaf. Garnished with cilantro.

Ingredients for vegetable:

  • (1) box of firm tofu
  • (4) heads of baby bok choy
  • (3) cloves of garlic
  • (5) Shiitake (dry mushroom) presoak to soft them.

Instructions:

  1. Cut tofu triangle shape and half inch thick
  2. Pan-fried tofu to brown color with litter cooking oil, then add soy sauce.
  3. Wash baby bok choy well and slice them
  4. Stir-fried bok choy and shiitake with garlic, add salt and pepper as desire.
  5. Add tofu to bok choy last and thicken it with corn starch water.
  6. Serve them together as my picture or separate them as two dishes.
