Noodles with Ground Pork and Sweet Bean Sauce

04/02/2018: This simple and easy to make noodles brought back a lot of memories. Whenever we need a quick meal, this would be my first choice and nobody would complain to have it. I posted this dish to Instagram on 2/18/2018 and got a good review. So I like to share this recipe with anyone who needs a quick and delicious meal.

Ingredients:

Any kind of dry or fresh noodles you like. Here I always use the thin dry noodles from Chinese supermarket that will cut cooking time. Angel Hair from supermarket is good choice if you don’t want to go to Chinese supermarket to get dry noodles.

(1) LB ground pork, (4) tablespoon sweet bean sauce, (2) teaspoon five spicy powder, (2) tablespoon dark soy sauce (see picture below), corn starch, scallions, (2) cucumber, (3) eggs. (for four servings)

Instruction:

  1. Cook the noodles in boiling water until it’s soft. Drain the noodles. Add some sesame oil or olive oil to the noodles, so they won’t stick together. I always use sesame oil and add litter soy sauce for the color.
  2. Stir-fried ground pork with vegetable oil in medium heat. Add sweet bean sauce, five spicy powder and soy sauce. Add some water and stir the ground meat with the sauce very well together (no big chunk). Enrich the sauce with corn starch and litter water at the end.
  3. Scramble three eggs and pan-fried it to make a sheet, then slice it.
  4. Slice the cucumber and dice three scallions.
  5. Stir the diced scallions and sauce before serving.
  6. Put the noodles to serving bowls, add meat sauce, eggs and cucumber on top as picture and serve.

To make the meal more interesting, I served a plate of chicken thighs with the noodles as the picture shown. I will post that recipe later.
