Sweet and Sour Golden Pompano (金鯧魚)and Tofu

6/15/2020: Fish was a common dish for dinner when I grew up in Taiwan. The market has many choices for fish that you could buy. Golden pompano is a delicious fish regardless of how you cook it.

 

Ingredients:

A whole golden pompano, cooking wine, salt, ginger, scallions, sugar, vinegar, tofu, corn starch.

Instructions:

(1) Clean the fish well first, slice the surface three times on both sides.

(2) Marinate the fish with cooking wine and salt for at least 30 minutes.

(3) Cut the tofu and drain the water.

(4) Pan-fry the tofu, then pour some soy sauce and scallions in before taking the tofu out.

(5) Pour some oil in the pan, add sliced ginger and white portion of the scallions.

(6) Cover the fish with dry flour before putting it in the pan.

(7) Brown both sides of the fish.

(8) Mix sugar, vinegar and scallions well, then pour onto the fish.

(9) Add tofu back to the pan.

(10) Cook each side of the fish for 3 minutes under low heat.

(11) Mix corn starch with water and pour in the pan to thicken the sauce.

(12) Take the fish and tofu out. Add some more scallions. Enjoy!
